Jinweide began in 1986 with a single obsession: the perfect bowl of Lanzhou beef noodles. A 24-hour bone broth, noodles stretched to order, and beef braised low and slow until it falls apart — that recipe has never changed.
We brought that tradition from northwest China to Amsterdam. Every morning our kitchen starts before sunrise — the broth simmers, the dough rests, and the noodles are pulled fresh to order in five shapes, from hair-thin to wide flat.
